Christmas lunch on the 25th is red, gold and warm, built around meat and sweets; the evening of the 24th, in the Italian tradition, belongs to fish and vegetables, a menu that brings with it a different palette, different materials and a different light. Laying the table for Christmas Eve as if it were already Christmas Day means missing the chance to have two distinct tables on two consecutive days.

White, silver and glass: the cool palette of Christmas Eve.

Our argument is that the Italian cena di magro, the lean Christmas Eve dinner, is a ready made aesthetic project before it is even a culinary tradition. The colours of a winter sea, the white of salt cod and porcelain, silver and glass glinting by candlelight: all you have to do is follow their lead. It is also a way of celebrating that feels close to contemporary sensibilities, restrained without being austere, luminous without being showy. For Christmas lunch itself, see our guide to the Christmas table and festive place settings.

What is the Italian Christmas Eve dinner, and why does it change the table?

The cena di magro is the meat free meal of 24 December, a legacy of the Catholic custom of abstaining from meat on the eve of feast days. Over time, especially in central and southern Italy, it has become a “false fast”: a lavish family feast in which fish replaces meat without any loss of abundance. In the north, Christmas Eve generally matters less, and the celebration centres on lunch on the 25th.

For whoever lays the table, the difference is substantial. Fish calls for pale plates that show off its colours, dedicated cutlery, glasses for white wine and sparkling wine, and dishes served in the centre to share. It is a long dinner that often runs until midnight, and the table has to cope with many hours and many courses without descending into clutter.

Which colours suit a Christmas Eve table?

For Christmas Eve we recommend a cool palette: milk white, pearl grey, silver, midnight blue, sage green and the deep green of fir branches. These are the colours of water and winter, and above all they flatter the fish, from the pink of prawns to the silver of anchovies and the white of salt cod.

The ideal tablecloth is white or pale grey linen, with napkins in the same tone or a shade darker. Red, if you must, comes in only in small doses, a split pomegranate or a few berries, leaving the field clear for the next day’s lunch. Save gold for the 25th or for New Year’s Eve: Christmas Eve is a silver night.

Why are glass, silver and white ceramics the materials of Christmas Eve?

Because they reflect candlelight and sit naturally with the sea. White ceramic is the neutral ground against which fish reads best: the Antico Doccia collection by Ginori 1735, white porcelain with a profile inspired by late Baroque Florentine silverware, brings a classic to the table without any coloured decoration. If you prefer a more contemporary relief, look at Dressed, the collection Marcel Wanders designed for Alessi in 2011, in white porcelain with a raised pattern on the rim and a finely scalloped edge.

White porcelain and fine glass, the neutral ground against which fish reads best.

For a more pared back register, the Inku range that chef Sergio Herman designed for Serax draws on Japanese ceramics and is perfect for crudo and small plates. Silver arrives with the cutlery: Hannah by Anna Castelli Ferrieri for Sambonet, winner of the Compasso d’Oro in 1994, has just the right rigour for a cool table. The glass, finally, should be fine and clear, like the Cilindro extra light glasses by Marco Sironi for Ichendorf Milano. For more objects and makers, see our selection of the best design homeware brands.

How do you bring fish to the table with style?

Serve fish whole whenever you can, because a whole fish is already a sculpture. The benchmark piece is the Pesciera fish kettle by Roberto Sambonet, in stainless steel, born of a study of the shape of a fish, winner of the Compasso d’Oro in 1970 and shown at MoMA in New York: a pan that comes to the table like a serving platter.

For the rest of the meal we suggest thinking in families of dishes. Raw fish in glass bowls on a bed of crushed ice, which keeps it cool and catches the light; fried dishes on greaseproof paper in shallow trays, served at once; salt cod and stews in white ovenware that goes straight from oven to table. Lemon wedges, parsley and bay leaves become part of the decoration.

The centre of the table is needed for serving dishes, so the centrepiece should stay low and narrow: fir branches, candles, a little citrus. We go into detail in our guide to the Christmas centrepiece, with the rules on height and proportion.

How does the Christmas Eve table change across Italy?

It changes a great deal, because the dishes change, and with them the way they are served. In Naples, Christmas Eve is the night of capitone, eel either fried or stewed, and of fried salt cod; spaghetti with colatura, the anchovy essence from Cetara, is another Campanian tradition. In Rome the classic is pasta and broccoli in a broth of arzilla, the local name for skate, alongside fried salt cod and squid.

In Sicily there are sarde a beccafico, sardines with pine nuts, raisins and citrus, while in the Veneto salt cod comes alla vicentina or with polenta. In Liguria the festive showpiece is cappon magro, a layered construction of fish and vegetables that is a centrepiece in its own right. At the table, the advice is to follow these dishes: fried food needs flat trays and quick service, soups and broths a white tureen in the centre, cappon magro a wide, undecorated platter.

How should you light a Christmas Eve table?

With unscented candles and low, warm general lighting, because this is a long dinner that runs late into the night. Candlelight on glass and silver is the real decoration of Christmas Eve: spread candles of different heights along the table, well away from dry branches, and switch off any cold lighting in the room.

If dinner stretches towards midnight, a rechargeable portable lamp on the sideboard keeps the atmosphere going as the candles burn down. For choosing the right lights throughout the house over the holidays, see our guide to Christmas lights at home.

Frequently asked questions about the Christmas Eve table

Why do Italians eat fish on Christmas Eve?

Because of the Catholic custom of abstaining from meat on the eve of feast days. Dinner on 24 December has remained a lean meal, and across much of Italy it is built around fish and vegetables.

Which colours work for a Christmas Eve table?

A cool palette of white, pearl grey, silver, midnight blue and sage green, which flatters the fish. Red and gold can wait for Christmas lunch.

Which plates suit an elegant fish dinner?

White ceramic or porcelain without coloured decoration, which makes the colours of the fish stand out, paired with steel or silver cutlery and fine glasses for white and sparkling wines.

Should the Christmas Eve table differ from the Christmas Day table?

We think so: Christmas Eve is a night time fish supper with cool colours and candlelight, while lunch on the 25th is warmer and richer. Changing the tablecloth and palette between the two gives each its own character.

Italy’s meatless Christmas Eve dinner read as a design project: cool palettes, glass, silver and white porcelain, fish brought to the table, and the differences between Naples, Rome, Sicily, the Veneto and Liguria.

Christmas Eve dinner in Italy is meatless: the menu revolves around fish and vegetables.

Cool palette: milk white, pearl grey, silver, midnight blue and sage green;
